We mostly know El Monterey for those low-budget frozen burritos that got us through our broke college years. So we were surprised to learn that they make a pretty mean quesadilla. Seriously, the El Monterey Charbroiled Chicken & Monterey Jack Cheese Quesadillas are really good.

We were surprised again when we learned that El Monterey is now expanding their quesadilla lineup, with the El Monterey Signature Three Cheese Quesadilla meal. Obviously, as soon as we learned this was a thing, we rushed out to pick one up so we could taste it. We have high hopes for this, since we really loved the last quesadillas we tried from this brand.

Now, before we dive into the nitty gritty, let’s cook this up. Thankfully, that’s super easy. Just pop it in the microwave for two minutes, give the rice a quick stir, then pop it back in for another two minutes and 20 seconds. That’s all it takes, folks. Now, eagle-eyed readers — well, pretty much all readers who were paying any attention at all — might have noticed that we mentioned rice in those cooking instructions. Not only does this meal contain a quesadilla, it comes with a side of rice and a nice little dollop of queso.

And honestly, this rice isn’t bad. It’s a bright yellow Spanish rice that comes with black beans and the occasional piece of corn or bell pepper. It’s a decent little side that we really appreciate, though we doubt it’s going to blow any minds.

Now, before we make our next observation, we’re going to point out that the instructions on the box say you’re supposed to microwave this; the stovetop isn’t even listed as an option. So obviously this quesadilla was going to have some problems, such as the shell being super soggy. We would love to try this same quesadilla cooked on a frying pan, because we think it would probably turn out pretty lovely.

That said, this thing is absolutely loaded up with cheese. Seriously, this is way more cheese than we were expecting, and it comes laced with jalapenos and green chili peppers for a little bit of spice. No, this isn’t actually spicy, but there’s a nice peppery flavor that makes it taste like it’s supposed to be. And if that’s not enough cheese for you, there’s a drizzle of queso on top of it all.

El Monterey is certainly not known for making diet-friendly food, and this isn’t going to break from that trend. In fact, this contains 580 calories and 840 mg of sodium. The sodium content is slightly above average for a frozen meal, but that calorie count is pretty ludicrous.

The El Monterey Signature Three Cheese Quesadilla meal feels like a guilty pleasure for cheese fanatics. While we’d hesitant to use a word like good, and we’d certainly not use a description like high-quality, there’s actually a lot to like if you just want a calorie-loaded meal that’s dripping with melty cheese. In that regard, El Monterey brought their A game with this meal.
