Good & Gather Plant Based Buffalo-Style Cauliflower Wings

Cauliflower seems to be having a moment right now. We’re not sure if this is a short-lived trend or if cauliflower is indeed the future of meat and gluten substitutes, but either way, it’s hard to deny that cauliflower fans are in hog heaven right now.

And really, this is one seriously versatile veggie, which is becoming a component of gluten-free pizza crust and sandwich crusts, as well as a vegetarian substitution for chicken in a lot of chicken-based appetizers.

It’s this later category we’re exploring today, with the Good & Gather Plant Based Buffalo-Style Cauliflower Wings. Good & Gather, of course, is a Target-exclusive brand, which means you won’t find this particular meal outside of a Target store.

Cooking this is super easy. Preheat your oven to 425 degrees Fahrenheit, then place your buffalo cauliflower on a baking sheet and cook it for eight minutes. Flip it over and cook it for an additional seven minutes, and you’re good to go. Now, these cauliflower wings do a lot of things that surprised us. The first big surprise is the flavor. While these don’t exactly taste like chicken, we also didn’t taste a very strong amount of cauliflower here. We even fed one of these to a very cauliflower-resistant staffer who admitted that he didn’t notice much of that cauliflower flavor he detests so much.

The next thing that surprised us was the consistency. We expected these to have that kind-of-mushy consistency that reheated cauliflower tends to get, but this actually has some substance to it. It doesn’t quite have that mild toughness that you’d expect from a real chicken nugget, but there’s some substance here.

And we were also surprised by how spicy these are. We were expecting a barely-there level of spice, and what we found was something that packs a pretty aggressive punch. We should point out that we’re saying this from a very Midwestern perspective — we don’t have the level of spice tolerance of a real spice fanatic or anything. But still, we found these to be a lot spicier than we were expecting them to be.

We do have one complaint: The buffalo flavor isn’t as strong as we’d like it to be. These don’t quite scratch that buffalo itch that something like, say, the Devour Buffalo Chicken Mac & Cheese does for us. But the flavor isn’t bad or anything. It’s just weaker than we’d like.

According to the package, four wings is a serving, and there should be about four servings’ worth of cauliflower in this bag. That means you should expect to find about 16 wings in a bag. (For the record, our bag contained 15.) If you stick with the recommended amount, you’ll be consuming 170 calories and 450 mg of sodium. While both of those numbers are nice and tiny, keep in mind that four wings is a pretty small amount of food.

The Good & Gather Plant Based Buffalo-Style Cauliflower Wings are a surprisingly competent batch of buffalo wings. No, they won’t fool any chicken enthusiasts, but they work pretty hard to distance themselves from their cauliflower contents. In fact, if you didn’t tell us these were made of cauliflower before tasting them, we probably wouldn’t have guessed right away. Cauliflower super-fans might not find these to be satisfactory, but the cauliflower-resistant might find themselves warming up to these pretty quickly.
