We’ve been meaning to check out the Fat Rabbit brand of frozen food for a while now. We really like the rabbit drawing that they use, and we also enjoy their feisty font choices. And their tagline of “Follow the rabbit” makes us feel like we’ve stepped into a fairytale. (Does Alice in Wonderland count as a fairytale? We think it probably does!)
Just like a book, you shouldn’t judge a frozen meal by its cover, but we just can’t help ourselves when we see cool packaging. We also admire Fat Rabbit’s efforts to make sure all their meals are vegetarian-friendly, especially since Freezer Meal Frenzy is boycotting Amy’s Kitchen until they improve working conditions.
Today, all the fairytale stars have aligned, as we’re finally checking out the Fat Rabbit Smoky Molé Madness.
This is simple enough to cook. Just peel back the film to let it vent, then pop the meal into the microwave for two and a half minutes. Give it a quick stir, then pop it back in for another two minutes. That’s all there is to it. This is an interesting combination of food, as it contains cauliflower, pinto beans, corn, and bell peppers as the primary ingredients. All this is tossed over a batch of brown rice, with just a sprinkling of cheese and some mole saucé. What’s interested about this is that there’s no primary protein source — no meat or meat alternative — even though there’s a respectable amount of protein here. It’s almost a salad!
There’s honestly not a lot of rice or cheese here, but it’s just enough to add a little texture. The flavor comes largely from the beans and corn, with the peppers contributing as well.
And then there’s the sauce, which is savory and just a little bit spicy. It’s not enough to send you running for a pail of cold water to dump over your head, but there is a little bit of a bite to this. And it contrasts really well with the sweetness of the corn.
This is pretty reasonable, as far as nutrition content goes. With only 330 calories and 490 mg of sodium, this is definitely healthier than your average frozen meal. Plus, it even contains 13 g of protein! The unfortunate thing, though, is that it’s just not very filling. Remember how we said earlier that there’s no meat or fake meat? That means this one leaves you feeling kind of hungry afterward.
The Fat Rabbit Smoky Molé Madness is quite good, and it’s low in calories and sodium (for a frozen meal). We do wish it were a bit more filling, but with a calorie count so low, we could justify adding a small salad to the side of this, or even tossing in some seitan.
