While our preferred way to enjoy a tortilla is… just a tortilla, we’re not opposed to culinary experiments like tortilla soup. Sometimes we’re craving tortilla, but are also in the mood for a nice hot bowl of soup. Lunds & Byerlys Tortilla Soup is for those days.
If you haven’t seen the Lunds & Byerlys brand in your freezer aisle, that’s probably because the brand is exclusive to the Minnesota grocery chain Lunds & Byerlys. Since the Freezer Meal Frenzy offices are based in Minnesota, we regularly stock up on goodies from Lunds & Byerlys.
While the frozen soup comes in a microwavable pouch, we’ve found that it’s easier to heat up these soups on the stovetop. All you need to do is boil a pot of water, toss the soup in, and let it thaw. Once it’s fully heated, you cut the bag open and toss the contents in a bowl. Cooking soup in the microwave can get messy, and the stovetop cook method is an easy and effective alternative.
When you hear the words “tortilla soup,” you might imagine a dish that’s a little on the spicy side. Although this does contain cayenne pepper, it’s actually not spicy at all. Even if you have pretty sensitive tastebuds, you should be able to handle the soup without much of a problem.
This is a light, low-calorie soup that’s perfect to serve alongside a sandwich or even a spicy salad. The serving size is pretty small, which means you might not want to serve the soup on its own. We couldn’t help but wish that this soup were a little more substantial. Adding some canned beans or even some salsa could kick this up a notch.
Lunds & Byerlys Tortilla Soup isn’t the kind of soup we envision when we think about tortilla soup. Still, it’s a tasty basic soup that’s a nice alternative to a classic tomato. If you’re a fan of spicy foods, like we are, or if you’re feeling hungry, we’d suggest adding a few ingredients to this soup so that you have a more fiery and filling meal.
