In the western world, edamame is typically treated as a snack food. However, the fine folks at Sweet Earth decided to use edamame in a new way, making it the focal point of their Kyoto Burrito.

This isn’t one of Sweet Earth’s best-looking burritos, but it is definitely one of their tastiest. It’s packed full of dark leafy greens like spinach and bok choy, and it also contains some delicious shiitake mushrooms. While it’s full of yummy flavors, the edamame is the highlight of the dish, providing the burrito with some much-needed crunch.

This burrito definitely isn’t the best choice for people that love heavy seasoning. The dish contains a sprinkling of sesame ginger sauce and a pinch of lime juice, but it only serves to highlight the flavor of the edamame, adzuki beans and vegetables. Thankfully, those flavors can definitely stand on their own.
