Lean Cuisine has disappointed us in the past, and one of the most notable disappointments in their lineup so far has been the Cheese & Bean Enchilada Verde. This was one of the few meals that we couldn’t finish, even though we passed it around the office so everybody could try a bite. So obviously, we were a bit hesitant to venture deeper into their enchilada line.
We do take our job seriously, though, so we knew it was only a matter of time before we needed to dive into the Chicken Enchilada Suiza.
Of all the meals we’ve tried so far, this one takes the longest to microwave at a whopping nine minutes. We’re not sure why the cook time was so long, but this comes out of the microwave piping hot. As a bonus, the tray is segmented into sections to keep your rice from mingling with the enchilada.
While this does have some of the problems of the Cheese & Bean Enchilada Verde, such as distinct lack of freshness, it’s actually quite a bit better. This is primarily thanks to the creamy buttermilk sour cream sauce it comes swimming in, which you’re given a liberal portion of. No matter how bland the enchilada tastes or how poor the consistency of its shell is, all of this can be drowned in the delicious sauce.
It does come with a side of rice, which is not particularly impressive. It gets kind of dry and crispy around the edges of the portion, but the rice in the middle of the heap is fine. It doesn’t have a lot of flavor, but it doesn’t taste awful or anything. It’s another problem that can be solved with the sauce, though if you spread the sauce over the rice you’ll find yourself running out fairly quickly.
There are certainly better microwavable enchiladas on the market. Amy’s Kitchen’s Roasted Poblano Enchilada is a good choice, as is Good Food Made Simple’s Chicken Enchiladas Verdes. Lean Cuisine’s Chicken Enchilada Suiza, however, is a mediocre frozen meal saved by a delicious sauce. We’ve been much happier with the pasta side of Lean Cuisine’s lineup.
