When it’s cold outside, the Freezer Meal Frenzy staff stays warm by eating plenty of warm and tasty food. One of our favorite things to eat in chilly weather is a nice bowl of soup. We enjoy soups of all kinds, but we’re particularly fond of light soups that are loaded with vegetables. Naturally, Amy’s Low Fat Vegetable Barley Soup stood out to us.
“Now wait a minute,” you might be saying. “This isn’t a frozen meal at all.” Yes, dear reader, your protests are correct. However, we would like to point out that Amy’s Kitchen actually includes advertisements for their soups on the packing for their frozen meals. We’re just following their very polite instructions.
Like most canned soups, preparing this one is virtually effortless. We chose to cook it in the microwave to reduce mess, but the stovetop instructions are also very simple. If you decide to eat this soup for lunch or dinner, you can expect your meal to be ready in just a few minutes.
This is an extremely simple vegan soup, and it can definitely use a little seasoning when it comes out of the can. We chose to spice it up with a little bit of black pepper, but we can see it working with a wide variety of spices. Smoked paprika would be delicious in this, as would thyme and oregano.
You probably won’t want to eat this soup when you’re ravenous; there are just 180 calories and 4 grams of protein per can. However, if you’re looking for a light lunch, or a soup that you can pair with a salad or a sandwich, this basic barley soup is exactly what you need.
We really love Amy’s frozen foods, and we love Amy’s Low Fat Vegetable Barley Soup as well. The next time you venture beyond your freezer aisle, you might want to keep an eye out for some of Amy’s non-frozen products. Their soups are definitely worth sampling.
