Pesto is a fairly simple sauce, but it isn’t always easy to get it right. All too often, pesto dishes contain far too much basil. When the proportions aren’t right, the basil can overpower every other ingredient in the dish.
Thankfully, there are no such problems with Amy’s Pesto Tortellini Bowl. The pesto contains the ideal amount of basil, and the creamy sauce is the perfect compliment for Amy’s whole wheat cheese tortellini.
With this dish, Amy’s Kitchen doesn’t reinvent the wheel; this is just a basic cheese tortellini coated in a simple pesto sauce. However, when the quality of the ingredients is high, a plainer dish can be a joy to eat. Our staff gobbled this meal down, and we would have been happy to go back for seconds.
There are a few small details that really make this dish sing. The bread crumbs (which are made with organic wheat flour) add some interesting texture to the dish, and the organic garlic and spices help bring all of the other flavors together.
There’s one clear downside to this dish: it’s high in calories and fat. It contains a whopping 450 calories, 180 of which come from fat. Dieters might want to stay away from this microwave meal, but everyone else should give it a try.
