Soup may be a classic comfort food, but not all of Freezer Meal Frenzy’s staffers are soup lovers. In fact, some of our reviewers avoid soup as much as they can. Thankfully, we’ve got some real soup enthusiasts in the office as well, because it lets us check out things like the Lunds & Byerlys Potato Corn Chowder. If you side with the soup lovers rather than the soup avoiders, and you’re as addicted to frozen foods as we are, you might want to look for this soup.

Of course, not all of our readers will be able to find Lunds & Byerlys in their freezer aisle. This upscale grocery store chain is exclusively located in Minnesota. If you’re able to access Lunds & Byerlys, we highly recommend checking it out. The store has an impressive frozen food selection.

The cooking method for Lunds & Byerlys soups is a little unusual. The frozen soup is sealed in a plastic bag, and you can toss the bag in a pot of boiling water to heat it up. Once the soup is fully thawed, you slice open the bag and pour the contents into a bowl. (There are microwave instructions too, but the stovetop cooking method has been serving us well for a while).

Like most Lunds & Byerly soups, this isn’t a substantial serving. There’s enough to feed one person here, and even the single serving is on the small side. It really feels like it needs an extra ingredient to bulk it up. We think Trader Joe’s Sausage-less Sausage would be delicious in this. Adding frozen veggies, like carrot coins, would be another great option.

Even though this soup was a little light, we enjoyed the bowl we made. The diced potatoes still have their skins, which gives this soup an appealing earthy flavor. This is a cream soup, but it isn’t at all rich or decadent. This is something you could easily eat when you’re feeling under the weather. You could even dip a grilled cheese sandwich in your bowl!

Lunds & Byerlys Potato Corn Chowder isn’t the best soup that Lunds has to offer, but we like it all the same. Just make sure you’re prepared for the small serving size. Serve this soup with a salad or a sandwich, and you should have a pretty solid meal.
