Cauliflower tends to be a bit divisive in the Freezer Meal Frenzy offices. Some of our staffers find it to be off-putting, while others are happy to dig into a cauliflower dish. Regardless of how you feel about this cruciferous veggie, it’s hard to deny that cauliflower is a popular ingredient in frozen dishes. Trader Joe’s Spicy Mexican-Style Riced Cauliflower is just one of many meals built around cauliflower.

Like many of Trader Joe’s bagged frozen dishes, this is a breeze to make. Toss the oil of your choice in a pan and let it warm, then add in the contents of the bag. You’ll need to stir it every now and then, and you may have to break up a few frozen chunks of cauliflower, but it would be very hard to mess this meal up. After about nine minutes or so, it should be ready to eat!

If you’ve never had cauliflower rice before, you should know that the texture isn’t that similar to actual rice. It’s very clear that this meal is made from cauliflower. As long as you don’t mind that, however, you’ll find a lot to like here. This dish is bursting with flavor. When we tried the Trader Joe’s Riced Cauliflower Stir-Fry, we felt like it was missing something. This Mexican-inspired dish is perfect as is.

While opinions may vary when it comes to the spiciness levels of food, we felt like this had some real kick to it. Thanks to the combination of pickled jalapeños, cayenne pepper, and cumin, the dish has some actual heat. The vegetable that takes center stage here is the cauliflower, but there are also plenty of bell peppers of tomatoes.

Since this is mostly just a veggie blend, there’s not a lot of protein here. You could easily make it into a more substantial meal by adding some chicken, egg, soy chorizo, or another protein of your choice. If you’re looking for something to serve with your favorite frozen quesadillas, it would also make a satisfying side dish.

The Trader Joe’s Spicy Mexican-Style Riced Cauliflower is one of the most flavor-packed dishes you can find in the TJ’s freezer aisle. If you hate the texture of cauliflower, this probably won’t win you over, but if you’re put off by the way it tastes, this dish might be worth a try. All of our staffers — even the avowed cauliflower haters — had to admit that this was pretty yummy.

The Mexican Cauliflower Rice is spicy hot like fire, but I love it. Some melted cheese on top helps curb the heat.
