We have to be honest here: we weren’t completely sold on Kashi’s Chimichurri Quinoa Bowl when we took it out of the microwave. The dish smelled fine, but we were a little nervous about how it looked. After a few bad meals, we couldn’t help but be apprehensive about green, sludge-like sauces.

Luckily, this meal tastes a lot better than it looks.

The slimy-looking sauce is actually savory, with just a slight hint of sweetness. Kashi says that the sauce is inspired by Argentinian cuisine. While we can’t comment on that statement with any authority — we’re not all that familiar with Argentinian cuisine, unfortunately — we can say that the sauce was both light and appealing. It enhanced the flavor of every ingredient in the bowl, from the red potatoes to the chunks of zucchini.

Quinoa, an edible seed, doesn’t really taste right if the texture is off. We’re happy to report that there are no texture issues here; the quinoa isn’t overly crunchy or mushy. We’re also impressed with the texture of the potatoes; they had just the right amount of softness. The bits of potato skin added extra flavor and texture. The freshness and quality of ingredients make this meal even better.

This vegan meal isn’t going to win over haters of quinoa or vegetables. However, if you do enjoy quinoa, you should definitely pick up Kashi’s Chimichurri Quinoa Bowl. It may not be the prettiest frozen dinner on the block, but it is quite tasty.
