There are some ingredients we can’t get enough of. We love anything with butternut squash, and we’re always happy to have more cheese. There are other ingredients, however, that should be using sparingly. Basil is definitely one of them.
The Egg, Basil Pesto, Potato & Cheese Scramble Cup by Evol is undeniably delicious. Unfortunately, the pesto contains way more basil than it should. If you halved the amount of basil in the cup, the taste of the pesto would substantially improve. As is, it often feels like you’re biting into a mouthful of basil.
This is a seriously tasty breakfast, and the extra basil isn’t enough to ruin that. While the eggs may not look that appetizing in the picture above, they actually have an excellent taste and texture. The potatoes are soft but firm, and they blend very well with the cheese and tomatoes.
Evol is on the brink of something great here. If they’re able to cut out some of the basil — and a little of the fat — this could be a go-to breakfast for us. As is, this probably won’t enter into our regular rotation of freezer meals. We’ll just turn to it when we’ve got a serious hankering for scrambled eggs (or basil).
