Amy’s Kitchen is one of our all-time favorite frozen food brands. Because we’ve enjoyed so many of their products, it’s rare to see something we haven’t sampled before. When we saw that the Amy’s Kitchen Cheese Enchilada had somehow flown under our radar, we were eager to give it a try! (We probably missed it because we have tried the Whole Meal version of this enchilada.)

Heating these enchiladas isn’t complicated, but it does take a bit of time. It took us around 7 minutes in total to thaw out our enchiladas, which is comparable to nuking a frozen lasagna. Amy’s Kitchen describes these as a comfort food, and that’s a pretty apt description. Even though these enchiladas are fairly simple, there’s a generous serving of every major ingredient. The enchiladas are stuffed to the brim with gooey jack cheddar cheese, and they’re soaked in a slightly spicy enchilada sauce. This would be a terrific meal on a chilly day.

Although we’ve had issues with gluten-free tortillas in the past, these tortillas seem perfect. They taste like normal corn tortillas and are easy to cut through with a fork. We never would have guessed this was a gluten-free meal if it didn’t say so on the box.

Although Amy’s Kitchen makes all of their frozen meals with natural ingredients, these enchiladas aren’t exactly healthy. There’s about 940 mg of sodium here, which is nearly half of the daily recommended serving. A box of enchiladas also contains 490 calories — but with 21 grams of protein, it should leave you feeling full for a while at least.

Amy’s Cheese Enchilada isn’t something that we’d eat everyday, but it makes a great once-in-a-while treat. This isn’t anything mindblowing; it’s really just two cheese enchiladas that are slathered in sauce. Still, we find that simple dishes like this can really hit the spot sometimes, and it’s especially impressive to find this in a gluten-free version.
